Low Carb Diet info and recipes

First of all, you may be wondering: what’s the meaning of a Low Carb Diet, or Atkins Diet? It is, in fact, a very simple diet. It involves a cut on all carbohydrate from the diet and increased protein and fat intake. Cut on things like pasta, bread, rice and alcohol, yet unlimited amounts of meat, cheese and butter are suggested to eat. That’s why sometimes Low Carb Diets claim to be luxurious diets.

Our Stone Age ancestors certainly roughed themselves for food. They butchered the kill during the marathon hunt that lasted for days. They wandered for miles to gather wild fruits, grains and nuts. If they wanted to eat something sweet, beehive was smoked out of the bees to get the honey. This was done by climbing up a tree or chopping it down. Hard way to food!
Studies indicate that human beings come into the world with hundreds of genes and associated hormones that regulate the energy-balance equation. Calories consumed by us on one side and calories burned, through physical activity and calories needed to keep the body healthy on the other. Anything left over transforms into body fat.
Well, now that theory is over, let’s see some recipes, 3 in fact, a soup, a main course, and a candy for desert.

Low Carb Tomato Soup

Ingredients

  • 8 oz can tomato sauce (plain, like Hunt’s)
  • 1/2 cup water
  • 1/4 cup heavy whipping cream
  • 1 pkg splenda

Serves: 2 (40 calories each)

Directions

  1. Just mix together in saucepan, heat and serve.

Low Carb Red Curry Beef

Ingredients

  • 1 lb chuck beef stew
  • 1 T butter
  • 1/2 t curry
  • dash cinnamon, cardamom & pepper
  • 1 cup canned coconut milk
  • 1/2 c red pepper
  • 1 tbsp paprika
  • 1 garlic clove

Directions

  1. Brown meat and garlic in butter, then add spices and stir fry few minutes.
  2. Add red pepper and coconut milk.
  3. Reduce heat and simmer till done (2-3 hours, add water if necessary.)

Serves: 3 (480 calories each)

Low Carb Minty Chocolates

Ingredients

  • 8 oz. cream cheese
  • 1 stick butter
  • 1/4 cup cocoa
  • 1 t peppermint extract
  • 1/4 c. heavy cream
  • 10 pkts Stevia (or 7 drops of liquid Stevia)

Directions

  1. Put cream cheese and butter in a microwave for 15 seconds to soften.
  2. Blend all ingredients. Spoon into paper cups and chill.

Serves: 15
